Quality and Surround Sound

I have a UN55H6350 w/ the latest plex app on smarthub. For the life of me, when connecting to a friend's library, I cannot figure out how to get DD5.1 or DTS to output via SPDIF (optical) to my receiver properly. It's typically PCM which is clearly 2 channels when I put my ear to all speakers, but randomly it will connect DD5.1 or DTS - I assume based on connection or quality. about 50% of THOSE times I actually hear proper surround sound with all 5 channels working.

Additionally, the video quality is sometimes really bad.

Anything from my local library works with DTS/DD5.1 flawlessly every time.

So, I began playing with the remote quality playing in the SmartTV Plex app settings. But even if I set it all the way up to 12, I can't seem to get surround sound and better quality video.

I also can't find documented ANYWHERE what the specific 1-12 numbers mean. I would prefer to set a long buffer and have top quality... what are my options here?

    Aha, I did just find on this forum through the manual the quality table at last!!! However, it does not touch on audio, so this is my biggest problem right now.
