Can I ask plex to play the most recent episode of a TV show without knowing the actual season and episode number?

    On a Roku?

    Sure - with caveat:
Go to the main Show page and hit the play button.
Caveat - that's going to play the 'unwatched' episode AFTER the most recent 'watched' episode - and, yes, the way that happens can sometimes annoy the bejebus out of you. We've told Plex about this many, many, many, many, many, many times and at least once more than those 'manys' they have ignored us.

The Play button at the main show page should play the first 'unwatched' episode - no matter where it is. Apparently Plex is unable or unwilling to make that happen.

    So.... depending what you have...
    yes, and no.

You can always hit the FF or RW button from ANY episode page and start backing up until you get an 'Eyeball' - or get to the first 'unwatched' episode.
