are you talking about wiping the Roku and its settings or the Plex Media Server.
if you're talking about Roku -- playback data etc. are not stored right on the Roku, so you should be good to go to delete the client app and its settings.
If you are talking about the Roku app itself then yes, and it is pretty easy.
That will put the Roku app back just as it was when you first installed it but since the posters, playback states etc are stored on the server they will not be impacted. You just have to re-link the app to your server.
