I assume that your media storage is not inside the Plex server computer, right?

1. Disable
Settings - Server - Library - ‘Empty trash automatically after every scan’

2. Restore an older backup of the Plex database [https://support.plex.tv/articles/202485658-restore-a-database-backed-up-via-scheduled-tasks/](https://support.plex.tv/articles/202485658-restore-a-database-backed-up-via-scheduled-tasks/)

The idea is to have the box **not** checked.

Then you cannot go back to the previous state of your library, which had all the items still there.
