If so, I think it's not what Plex is for, and if not, I think a use case would be nice

Nope, i just like to watch anime in high definition (BD's rips) and most of bd releases contain different sound from different dub teams, and they are in external audio tracks.

And It takes a long time to remux 20-100 Gb video, just for adding a audio track .

There is no good reason those release groups would put out stand alone audio files.
Remux the file. Then tell the release groups to follow the rules!
