Your logs did not show the āfreezeā / āhangsā that I could see in logs from @DarkunderdoG - some of the requests that hung in those logs did not hang in your case but a few took over 2 seconds to complete - so a bit related.
I am not aware of any 6.7.2 changes that would have a bearing on this - but glad that you no longer have an issue

I spoke too soon and the issues arose again, I must have sent the wrong logs so apologies for that, now that you have seen the correct logs though from someone else hopefully the issue can soon be fixed.
I have a Plex Media Server development build available with the fix for the problem observed in your logs. Would you be ok trying it out and confirming fix or not (and letting me have server logs to check out)?

I think an update came out for the Apple TV, because now every time I launch Plex on it, itās crashing the server. Iām having the same issues with remote Apple TVās, I had to turn off my remote access because my parent Apple TV kept crashing it as well. Windows and Mac clients donāt seem to cause the problem. Duplicated this issue with my 4K Apple TV.
Playing a video file crashes the server, (even on the version before the latest).
When you try to click on the Plex icon in the sys-tray, it disappears.

After a day the bug came back. I am also happy to try and report everything.
Im seeing the same issues as well. As soon as we start playing a tv show on any of our iOS devices it kills the server a few mins later for everyone else. Unfortunately 5 of our 6 devices are iOS so weāre having to restart hourly. I have updated the Plex app on all devices to 6.7.2 but the issue still remains.
A fix to the issue observed and investigated from evidence provided by @DarkunderdoG has now been released in beta release Plex Media Server 1.18.6.2638

@DarkunderdoG please replace the development build I sent you with this beta release. So Uninstall 1.18.7.2363-b9b035627 through Add or Remove Programs and then download and install beta release 1.18.6.2368-97add474d
This Beta has a bug, it seems like if you try to play any movie in a browser (tried my iPad Pro, Windows 10 Edge), it crashes the server (icon disappearing from the sys tray)

Agreed, I upgrade my video driver (intel), and no more crashes. When I was trying to watch something from a browser it was hw transcoding which was crashing the server. The freezing related to doing a lot of navigating appears to be resolved with the beta version of server code. Thank you for all your support!
