when on the home screen you should be able to click up until you're in the top bar and then select the current user. when you click that one, you should get an option sign-out (among others such as switch user).

if you're actually using a home user, the sign-out might not be available.
in that case you might try accessing https://app.plex.tv/desktop#!/settings/devices and remove the Roku... this should require the Roku client to be signed in during the next start of the client.

I do not have access to the plex account so I cannot remove it.

found this... the hard way would be a complete factory reset (as it probably should have been done by the person giving you the device):
https://support.roku.com/article/208757008-how-to-factory-reset-before-returning-selling-or-gifting

Roku forums claim deleting the channel and rebooting the device should also clear all settings... however as this didn't work for you, you're running out of "nice" options

What's a non "nice" option? and I already tried factory resetting :(
(thanks for your help so far though)

I folded, I just made a new Roku account and it's working now.
