That’s why I asked you to post the screenshot. Plex would never see that as a TV show.
Set them up as @blim5001 has shown and Plex should be very happy.

Plex is not just a media player. The specific naming is required so metadata can be retrieved.

Actually, I have just done it ;like the screenshot fromblim5001, and plex still only sees 1 episode
I have:
TV Shows/The Pacific/Season 1/ episodes
If the episodes are named correctly it’s time to do the Plex Dance.
For an experiment I renamed The Pacific Pt1.mkv to The Pacific se01e1.mkv and also 2 other files / episodes.
In Plex TV Shows, after doing a scan the library, The Pacific did not show any new files. Also I noticed that the only file or episode was episode 10…strange??
Also again, some other TV Shows, for example, The Wire, for 1 season it shows just 3 episodes out of 10, and for another season it shows all 10 episodes.
This line here:
move all files for the media item out of the directory your Library is looking at, so Plex will not “see” it anymore.
Does that mean I have to move all my new TV Shows from my NAS server to somewhere else,and then do the remaining steps.

Update:
I moved all the new TV Shows from my NAS server, the followed the remaining steps.
I then moved back The Pacific/Season 01/episode names to TV Shows. I specifically named the episode as The Pacific - e01e1.mkv etc
I scanned the library in Plex, and it found the new folder, but again only 1 episode. Episode 10 again. aaargh!.

It should be:
s01
e.g.
The Pacific - s01e01.mkv
not se01 that you have in your screenshot
It still doesn’t look like you have a TV Shows folder. If you are adding The Pacific folder directly it will not work right. It should still find the files though.
You should only be adding one folder to your library at this point, /192.168.0.42/TV Shows/.
There is a TV shows folder it’s just how I selected it for what I am doing:

After renaming all the TV shows episodes to s01e1 etc, they all finally showed up in Plex, phew!
Good. It’s well worth getting the naming right.
Yes it does but as I said, I wasn’t aware of it before so thanks for the help and putting me right.
As an alternative I would strongly suggest taking a basic course in unix shell. Life will be rough without a certain amount of shell/filesystem knowledge.
Pardon me for asking, but what has that got to do with my original problem. Wether it be windows or linux, it wouldn’t be any different as far as I can see
