I am streaming videos from my Pi 2 across the my network to all my devices and even remotely to any pc, phone or tablet. Can I play Plex media directly through the Pi 2 HDMI port to my TV? If it is, I plan to purchase another Pi 2 and have it connected to my TV at all times. I don’t have a Smart TV and really have no need to purchase one anytime soon. I have not see anything in the forums regarding this specifically.

That is exactly what Rasplex does, yes.
Although you can’t do this on the same Raspberry Pi where your Plex server runs on. You’d need a second Raspberry Pi device.

Is the Pi 2 just not powerful enough to display the plex interface and stream at the same time?
If you search long enough you’ll find other threads in here with the same question.
Basically the answer is:
“No way, the RasPi has a smartphone-class processor and is only able to do one or the other, but not both at the same time.”
You’d need a second Raspberry Pi device.
Could the be accomplished by using Pi Zero with Pi 2, or should I use two Pi 2’s?
Definitely Pi 2s in my opinion. The Pi zero (which is comparable to the old Pi1) is just too slow.

I already have plex running on my current Pi 2. Did I miss the part on how to setup the second Pi 2 so I can connect it directly to my HDTV?

You are correct. My handicap lies in the fact that I belong to that group that hasn’t graduated to “NOOBS” yet. I have the Plex Server running on my current Pi 2. I need to follow the links you have above for the second Pi 2 so I can run the client and see the Plex Media on my TV to watch movies.
Here is what worked for me:

Signed up for Plex Pass

https://plex.tv/downloads - click on ‘Plex Pass Downloads’ at the top

On the bottome left, click on the ‘Plex Media Player’ download button

Select the “Embedded” tab and click on the Raspberry PI 2 download button.

Unzip the image (7-Zip)
-
Format your SD card
-
Write the image to the SD card (Win32DiskImager)

Insert the SD Card with your plex image into your RPI2

Boot up the RPI2
-
Enjoy

As mentioned above you need two pi’s. One to serve up the movies, the other to play them on your TV (one server, one client).

Here we go again, the RPi0 is not too slow, it runs Rasplex just fine and is the cheapest Plex client in existence and out performs many smartphones and tablets with Direct Play of just about anything except H265.
