Jellyfin! Not quite as smooth of an experience as the previous version of Plex, but on the other hand it also doesn’t collect information on what you’re watching in your own library, what you’re searching, details on your device and internet connection, and a [whole bunch of other stuff](https://www.plex.tv/about/privacy-legal/#you-have-the-right-to-limit-what-activity-data-is-sent-from-your-plex-media-server).
By the way, if you want to opt out of sending the “optional” data (not all of the above is optional, mind you - most of it isn’t) you have to actually click through those sections on that page to find the various opt out check boxes. They’re not located in a central location your profile or in your settings like you’d expect from any respectable company. And honestly that alone is extremely indicative of the type of company Plex is and who you’re dealing with here.
