Mit dem Referenzwerkzeug für MKV [MKVtoolnixGUI](https://mkvtoolnix.download/ "MKVtoolnixGUI")

Eine Datei vorerst auszuschließen geht nicht. Du kannst die Erzeugung nur global und pro Mediathek generell unterbinden.

Das Gegenteil ist möglich: starten per Kommandozeile für genau ein Video  
([https://support.plex.tv/articles/201242707-plex-media-scanner-via-command-line/](https://support.plex.tv/articles/201242707-plex-media-scanner-via-command-line/) - `--force --index --item XXXX` , where XXXX is the item ID) oder ein “[Plex Dance](https://forums.plex.tv/t/the-plex-dance/197064)”.

Die ID bekommt man aus der [Plex XML info](https://support.plex.tv/hc/en-us/articles/201998867-Investigate-Media-Information-and-Formats "Plex XML info")  
die Zahl in den Properties `ratingKey="...` oder `key="...`
