Plex renaming entire folders overnight

So I have my 7 seasons of Burn Notice saved in the standard formats listed below. I have all my scheduled tasks checked to run over night. And every night it changes season 4 to unmatched and just named Season 4 within the Burn Notice folder of Plex and changes Season 7 to Walking Dead Season 1. What is causing that and how can I fix it to not un-match those files? I have re matched them correctly multiple times as well as even going into individual shows and checking the locks on the names so they don’t change. But they were still changed. I have the tasks all scheduled at night as I have satellite internet and want to utilize my free bonus time during the night to do the most updates to meta data.

That’s the Issue.
Plex should simply be pointing to
G:\TV
Not individual shows.
From then on Plex will automatically pick up any shows added to that path.

Can you imagine adding thousands of paths? That would suck.
As @Xhaka stated. Add the root folder G:\TV and plex will scan all sub-folders from there.

So I put all the seasons into one folder named TV and Plex will put it all into the different show? I already have them divided into 28 folders for shows and a separate folder for each season. Most shows have more than one season so far and I have not had any issues with names changing till I started uploading my Burn Notice Seasons. Is there a way to change the folder structure without changing the history including the viewed status?

No.
Put seasons in the appropriate show folder and put all shows in the folder named TV.

Why 28 folders? Are they arranged by letters and # (a~z, #)?

I have 28 different tv shows loaded with multiple seasons. So the storage of the the shows on the disc is fine in the different ones but I should change the TV part of my Plex to only one folder that pulls in all TV folders. instead of added a new folder for Plex to search for each season I just let Plex search 1 TV folder and it will divide them up by itself within the system? So I leave file structure alone but change picture 2 from above.

If I understand you right. Yes.
You only point plex to the top level of your shows.
From all your examples/screenshots, that would be G:\TV
It would look like this.
