I just did the roll back. Pretty much same setup as you. Plex needs to get on this. Unacceptable.

We’ve identified 1 issue that may be causing this. For anyone affected, can you try using FireFox and see if the settings become available.

I can confirm that the problem persists even on Firefox 106.0.5 (64-bit), running PlexMediaServer-1.30.0.6359-1185e28d9-universal on a Mac mini (Late 2012) with macOS Mojave (10.14.6).
