What’s the score for the Xeon?
Xeon E3 1225 V5 @ 3.3 GHz is 7804 which is about 81% of what you had.
Sell it to someone else if you don’t want it.
Put it in “Turbo” case. LOL

LOL! Maybe I should… So basically from this thread, it sounds like this is more an issue with the CPU being less powerful than that of an Optiplex 7010, and not so much the fact that this is running as a VM.
Now what if I attach one of these to the box? Any hope to be able to handle more transcodes?
