Assuming your line has IPv4 behind CG-NAT, but also has full IPv6 connectivity, you can directly connect through IPv6. Plex unfortunately doesn’t do this automatically, but you can manually configure it:
Needless to say, for this to work the clients need to have IPv6 as well, but IPv6 is pretty widespread these days.
It is pretty annoying that IPv6 in Plex has to be manually configured, it’s 2020. There are hundreds of millions of people now with this situation, perfect IPv6 connectivity but IPv4 behind CG-NAT, and it’s only growing faster.
