I do not know the capabilities of Plex on the PS5.
Using the Plex Android TV app on the Sony TV:
- Dolby Digital Plus + Atmos: Yes.
- TrueHD + Atmos: No, due to TV limitations.
DDP Atmos is the type used by Netflix, Amazon, etc streaming services. This can be passed via HDMI-ARC or HDMI-eARC from the TV to an attached soundbar, receiver, etc.
TrueHD Atmos is the type found on Blu-ray discs. No known TV permits TV apps to pass TrueHD or dts-HD MA audio to attached audio equipment. HDMI-eARC has the bandwidth, but TV manufacturers do not permit it.
Note that equipment attached to the TV’s HDMI inputs can pass the audio. So, if the PS5 supports TrueHD passthrough (I do not know if it does or not), then it can pass TrueHD audio to the JBL soundbar when connected to a HDMI input on the TV. The TV and soundbar must both use HDMI-eARC for this to work correctly. HDMI-ARC does not have the bandwidth to carry TrueHD (or dts-HD) audio.
Regarding Dolby Vision:
Dolby Vision support in Plex is a work in progress. At this time, do not expect it to work reliably. If the Plex Android TV app cannot play the video in DV, it will fall back to HDR10.
