I was wondering, how good of performance would I be expected to get using the hardware above? Would it be advisable to spend extra money to get a slightly better graphics card, or would the 1050 ti just work fine? Let me know what you think!

Run Linux and use the integrated Intel graphics.
EDIT: Some additional information.
If you run Linux, you can pull the GPU and use the integrated Intel graphics. If you run Windows, you will need to use the Nvidia GPU.
Elpamsoft has Plex performance information for Nvidia GPUs. It shows the 1050 Ti supporting three simultaneous 4K transcodes.
I’ve not seen performance information for Intel graphics. However, based on posts in the forum, the UHD Graphics 630 in 8th Gen CPUs should provide similar performance to the 1050 Ti.
You can always leave the Nvidia card in the system, test using both GPUs, then pull the Nvidia if the Intel graphics meets your needs.
I have a i5-8400 and it runs just fine with 4K - the client you’re using is arguably more important.
I don’t have a GPU in my build. I’m running Ubuntu 22.04 and use the Intel graphics with Quick Sync for hardware transcoding, along with Plex Pass to enable that too.
Turns out, somehow, I gave my old pc more credit than it was worth!
I think I was sleep deprived or something, but it is actually a 4th gen cpu.
So… not particular great for doing things off of.
Then use the Nvidia GPU.
Quick sync in fourth gen does not support HEVC video.
Ok. I haven’t bought the GPU yet, and I’m actually not sure if this old computer could power it? It has a maximum power output of 300w, which I don’t know if that’ll be enough. On secondary options, I have a laptop with a Pentium gold that I don’t use, but I don’t know the effectiveness of that.
