Do you mean the IPs of Plex clients or all machines which (try to) connect to your server?
The former you can see live in the Plex Web App in the Dashboard section.
Tautulli provides a history of playbacks and the player IPs.
For anything else, you need to enable “debug” logging and then inspect the server logs after the fact.
