The log indeed has little information. There seems to be no transcoding involved (video is direct played). So my guess is on the network performance – however… not knowing anything about your setup… that’s just a guess.
PS: you find me very surprised as for what file names Plex seems to be properly matching in your libraries. There’s little room to get further away from any naming convention
