Hi,
Is there a way to configure Plex News with only the sources that I choose? I’d like to see News from only the sources I select, and do not want to be propagandized by strange sources that I feel is just Fake News.

You can customize News - even per-user.

That’s a link to the Support Articles section for News. Should be something in there that talks about Personalization I believe.
