Has anyone considered/tried using a VM install on Linux Server via Unraid? That may be my next step. I don’t want to ditch Docker but that may be the only way to isolate Plex.

Been 24 hours without any issues. Only time will tell. 
15 hours later, It finally corrupted.
Decided to run plex in a headless vm on ssd unassigned disk.
Sitting on 6.6.7 unraid for nearly a week now, after my downgrade, and no issues. I have added another 2TB of TV shows, and 1TB of movies, so I am giving the DB a workout.
Unraid 6.7+ has sqlite corruption bug. They are trying to find how to replicate it so they can fix. I got lucky I stayed on 6.6. They did say to make sure all /config mappings are to /mnt/cache (or /mnt/disk#) instead of /mnt/user/ as that can cause it as well as being on 6.7+.
