Update your Apple TV App, Advanced Video Player should be default now (iirc) and plays most stuff directly. But most ppl do not use an Apple TV (at least here in Europe)
I have many users who use apple tv, and transcoding is happening a lot (even at max quality). As far as I know their devices are updated, and I/them are based in Europe, but like I said, Infuse works perfectly. Sometimes it manages direct stream, and only transcode the container, but a lot of the time I i.e. see 1080p 8M transcoded to 1080p 8M, the native player that plex uses it’s just very picky on how the stream is encoded unfortenately. but crashing the topic, sorry.
Then it’s a setting issue on your users part or you are using some weird format. Guaranteed.
Or an older unsupported atv.
Mine has not transcoded anything since using the Advanced player, same for the few users who have an ATV here. Maybe they are using the old video player, idk, AppleTV app is good now, even supports video thumbnail preview thingie. (finally)

Perhaps the new player is still plex pass only? I do have plex pass myself, but no appletv, so can’t reallty test myself.
Voting for this as well, it’s so annoying. I can’t believe this isn’t already a thing.
At least default to original quality on devices that are usually on non mobile connections, like Browsers, Streaming devices like the AppleTV, Roku, Firestick, whatever etc.
I do not understand the reluctance to make a setting for server owners to adjust, hide it under advanced or something.

Well this is certainly not reality. Especially TVs are rather limited as clients.

Highly depends on what you throw at it. You obviously don’t have the audio formats that cause trouble with these clients. Still, I am not a Samsung expert.
The only Audio transcode I got if I remember correctly was 7.1 True HD, The Samsung TVs can direct play alot of formats.
To make a better point then, It can direct play much more then it needs the Default transcoding option by PLEX. Also our bandwidth is suitable for direct play.
I have also another media server I am testing for me and some remote users running beside PLEX, this defaults to auto and it works great, I rarely see a transcode, it detects the link speed first…
All my Samsung TV users direct play anything i have, including 4k stuff.
If some Audio formats need transcoding for some TVs, thats ok but what has that to do with the 720p video transcode for all clients by default?
FWIW, we’ve been discussing this internally, and have some stuff in the works which will hopefully alleviate at least some of the (totally valid!) concerns around the current default. I can’t give a timeline for it yet, but it’s definitely considered “low-hanging fruit”
