Noticed the script seems to be able to do some things with the buffer size as well, I’ve struggled to uncomment the correct part of the code it seems, would this be more complicated than I’m thinking it is to enable?

Just because this thread is so long, reminder that in addition to this NGINX script, Tautulli scripting is also an option. It won’t force a direct play but it will end a transcode and leave the message of your choice to the client which forces them to change their setting or call for help. It has a lot of conditions to set. User, codec, bitrate, etc. I have a condition to allow mobile connections to transcode because to me that’s the intended behavior and that has been reliable.
And again those Tautulli shenanigans (as I stated earlier) only work for Plex pass. Plex should just fix this on their end instead, it’s 2022 ffs!
I feel like just stopping users from streaming will cause them to just not bother watching anything in future, there will be some who will reach out though i’m sure
I put the instructions in the stop message and say to call me if needed. If they won’t follow written instructions, and won’t call me, it’s still way better than me having to reach out to them and nag them in the middle of a movie or show binge. Right? Unless I was billing them and lost a customer, which I’m absolutely not interested in.
Just based on the context of this issue it feels to me like we have an unspoken reason to not upset the end users. I was invited to a Discord server and out of curiosity I joined it. Hundreds of people in there for paid Plex service. I’m trying not to be cynical but I’m starting to think that’s who Plex is catering to with this policy, because that’s the only logical reason I can think of. Because:
If they won’t respect you enough to change a setting, what is driving us to include them on our private media collection? My only guess is payment… or clout I guess? I just put a lot of time into it and like to share with family but that won’t motivate me to allow them to transcode on my server for no reason because they won’t click a button.
They’re probably not working on it, else it would be available already.

Like @charliemurphy mentions, the trick is to write the error message content to point them to the Settings > Quality > Video Quality dropdown.
Any further context is very tricky to write given that terms like “transcoding” are domain-specific to being the server operator — and stuff viewers shouldn’t need to / won’t know anyway.
Personally, mine is, Looks like you're on a new device/app! Please change Settings > Quality > Video Quality to Original/Maximum; server workload is reserved for need-based cases like bandwidth limits. Please contact me if that's you!

Sadly, jellyfish is nowhere near ready, it’s slow with a bad ui and a torrent of bugs and very limited client support with even worse ui and usability. It’s not a competitor, yet.
I am rooting for them though, maybe in 2 or 3 years.

Apologies if you have already answered this but, what would be the harm in keeping the current default settings on server but also include an option allowing the server admin to change default client stream quality? The clients can still make there changes to fit there personal bandwidth needs. Managing settings on one (or a few) servers is easy, but trying to get every client to change there settings on every update/reinstall is rough, and (I think) the core issue here.
