set it to Sync unwatched only, when it is then watched, it will auto delete on the next sync.

Having to manually remove the sync'd content once you have watched it is tedious. If Plex automatically detected that the particular sync'd content had been played, it could then remove it, making room for more content.
My I also add, the content may have already been set as watched - i.e. on another device and using your option, the content would therefore never be sync'd anyway.

It doesn't sync all unwatched content, only the unwatched content you tell it to.
Plex is an ecosystem, if it has been flagged watched on 1 device, it is considered watched on all of them - devices are not independent.
it sounds like you haven't played around with sync very much, you might want to start playing with some of the options to see what they do.

My point exactly - if it has already been watched then it won't sync if you set it to unwatched!
Let me re-word the request - For example:
I have a movie that has been previously watched (or any content for that mater). I want to sync it to an android / iOS device for future watching. After I then watch it (again), I want Plex to automatically remove it from the device. Currently it will not do it. Each time I have to then go and manually remove it!
If you are saying that it should be doing this already, then change the feature request to a bug report.....
