Hardware for server build

Hello!
A very quick query. I’ve had a Plex server running for quite some years using UnRaid on a Supermicro Motherboard, intel 1230 cpu and 32Gb of error correcting memory.
Whilst this was cutting edge in its day it is now far from it. If I was building another server from the ground up, and considering the new hardware transcoding abilities of Plex, what would be the ideal Motherboard, CPU, and graphics cards to use? Or have things moved on so far that a simple NAS box would do the job?

I use a UnRaid NAS with small CPU and have no issues, I also make sure all my clients can direct stream everything so no transcoding is required.
