All you do is create a new directory on the new drive such as D:\PLEXDATA
change the option mentioned above to now read D:\PLEXDATA
shut down the server
navigate into the Plex folders and copy/move the folder Plex Media Server to the new location so it looks like this
D:\PLEXDATA\Plex Media Server
Restart server

I have all my meta data on a dedicated 1TB SSD.

I will keep that in mind for next time. I am also on windows. Plus, now if anyone else ever has this issue they have 2 options. Thank you both!
