How can I see what I have shared, and with whom?

You can e.g. use Plex Web:

1. Click on your profile picture in the top right corner
2. Click on your profile picture at the top of the popup
3. Select the friend in question
4. Click Library Access and see what libraries or individual items you’ve shared with that user.

As @tom80H mentioned, you can look at a user and see what you have shared with that user, but there’s no way to look at a library and see which users you’ve shared it with. I proposed such a feature some time back. They came very close when they added the “Sharing” (now “Grant Access”) option to the Library action menu, but they neglected to indicate who already has access:
