How effective would this build be for my PMS?

Right now i am using an older iMac as it was laying around and has been getting the job done. The issue comes in when having multiple streams, both internal and external to home network, with transcoding needing on a portion of the files. This would solely be a Plex server and nothing else.

Intel Core i5-8400
8GB DDR4+16GB Optane Memory
2TB HDD for OS

1TB HDD for OS

I already have an 8TB external drive for media files but was not sure if this would be ample for 4-6 potential concurrent streams.

I would substitute an SSD for the OS drive. (A TB is overkill.) Otherwise the specs are fine.
