I want a way to remove ratings by setting the ratings field to NULL. Setting the rating to 0 displays 1 star in the mobile app.

No as in removing the star rating altogether by setting the rating field to “null”. I thought setting the rating to 0 would hide the star symbol but instead shows 1 star.
It looks like this has been implemented – or it might already have been working.
Clicking next to the left-most star will clear the ratings (=zero stars)

It helps to “drag” the stars from right to left, if the mouse is not that accurate.
