In what app are you missing Polish language option?
I’m currently checking and the web app has that option available…
You can set the application UI to be displayed in Polish
See: Settings > Plex Web > General > Language
and you can select Polish as library language for Plex to show Polish language metadata for items in that library.
See: ︙ > Manage Library > Edit... → General
