Would this work good for a Plex server?

Should work fine. I still have a 2009 Mac Mini 2GHZ Core2duo with 4g Ram test machine that runs El Capitan and PMS without issue.
Awesome, I can’t really find the processors for a passmark test. Any idea how many 1080p steams this could handle at once?
Are you sure you have the CPU model number right? According to Intel, that’s a 2.26GHz 4-core processor, not 6: http://ark.intel.com/products/40200/Intel-Xeon-Processor-E5520-8M-Cache-2_26-GHz-5_86-GTs-Intel-QPI

I have a mac pro 3.1 2008 model.
Dual quad core xeons clocked @ 3.2 ghz
32 gb memory
512gb geforce 680 ti
1Tb samsung evo ssd
This works fantastic for plex, i have all my media on a 18 bay synology nas using nfs shares.
I make a 24gb ramdisk for transcoding and have has 10 simultanious streams going without issue.
My isp gives me 100/20 down/up Mbps.
I have both my nics teamed for throughput as well.
Locally i direct play all my remote clients set their bandwidth to 2/3 Mbps on their plex clients.

Ok, with the E5650, the passmark per CPU is 7609: http://www.cpubenchmark.net/cpu.php?cpu=Intel+Xeon+X5650+%40+2.67GHz Given you have 2 of these, you should have no issues simultaneously transcoding 4 or 5 1080p streams at once if you wanted.
