Why don’t you just create a playlist for these episodes?
Just pick them out of the regular Simpsons show and arrange them in the order you like.
Plex fetches show metadata from TheTVDB.
It can use the original ‘aired’ order of episodes or the ‘dvd’ order or the ‘absolute’ order.
There is no support for any additional episode orders whatsoever.
If you want to create a completely custom tv show, you’ll have to do so in a new, completely separate tv show library. This library needs to have ‘Personal Media Shows’ set as its default metadata agent.
