You can already add different Editions of a movie and have Plex distinguish those.

Plex uses the term editions for different cuts of a movie.
Plex uses the term versions to mean different versions of the same cut. For example, a 1080p version and a 720p version of the same cut of a movie.
Different editions of the same movie are listed separately in the library.

Are you asking how to tell which of your files is an extended version vs. theatrical release?
IMDB.com has an “Alternate versions” section for movies (if they have alternate versions that is). You can find what type of version (Extended Cut, Directors Cut, Unrated, …) there. There is a time length in this section as well. Length of the file is what I use.
