Hi please can anyone recommend a good and reasonable priced NAS drive for PLEX to work with a Mac Studio M1 Max, Apple TV and Apple Vision pro.
Also , is there one that works with M4v files rather than MP4 files, as converting them all is a pain. Any help appreciated. Thank you

NAS drives are usually optimized for NAS use cases. I don’t have a good benchmark how they’ll perform on a desktop or workstation machine (e.g. when it’s not on/running 24/7 but will be powered for for power saving all the time).
Otto beat me to the mp4/m4v file question.
They’re the same with only some neglectable differences (Apple expanded the mp4 container with support for some additional metadata tags — though most apps will nowadays support those in the classic mp4 container).
This has nothing to do with Plex though, as it converts the container on-the-fly if necessary.
Also, the “conversion” of m4v to mp4 is a simple renaming of the file. It can be done super quick for dozens of files at once.
