Putting them into a lower priority is not switching them off. They will still be fetching albumart. And this is what you are offered there, in the ‘Edit Poster’ dialog.

If you still want to use the Premium Music features, there is no way.
If you don’t care about the premium features, you can use the equivalent of a ‘Home Video’ library for music: Create a conventional (non-premium) music library, then set its ‘Agent’ to ‘Personal Media Artists’.
This one will rely solely on embedded metadata and embedded/sidecar cover art. No online agents involved, whatsoever.
With this method, you’ll have to supply the artist bio’s and pics yourself as well.

I want Plex to use the 600x600 album art I’ve embedded in every track I own rather than going on the web and using some 203x214 image with a price tag stuck on the front.
I still want it grab bio and album info. That’s not too much to ask. It’s really just adding a setting that looks like this:

This is already possible. Just move ‘Local Media Assets’ to the top, and then add your files.
Additionally, for a Premium Music library, edit the library, go to the ‘Advanced’ tab and check ‘Use embedded meta data’.
