Drop all the snap and other “fancy additions” and simply install the Plex Media Server directly on that Linux system.
You can install the public releases using a repository… this way your OS can take care of updating it for you.

If you’re not familiar with Linux… keep it simple or you’ll get lost fast.
This can include sticking with a more common platform instead of going for a more fancy one… those tend to be much better supported and you’ll find more documentation.
