Since it seems that Replay Gain is not recognized in Plex, will analyzing my music library replace Replay Gain info with something else? If not how is something equivalent implemented?

Loudness leveling is supported as a Plex pass feature.
The server will analyze your files with the EBU R128 algorithm, if you let it. The results will only be stored in the internal database of your server.
