How to limit access to some folders on the same account?

No, you won’t be able to “re-share” the content that was shared with you. The owner of the server would need to share with your kids directly (which would require them having “real” plex.tv accounts, instead of being managed users). But then you wouldn’t be able to restrict them from watching unsuitable content…
