Simple, but there should be a way to filter movies by language and there should be a little 2 letter language tag when you open a movie page next to the quality and sound info!
In Plex Web, navigate to a Movie library and select the Library tab.
Click on All. Scroll down and select either Audio Language or Subtitle Language.
The process will be similar in other clients.
Note:
- Audio tracks must be tagged with the correct language.
- Embedded (internal) subtitle tracks must be tagged with the correct langauge.
- External subtitles must have the correct language code in the file name.
Use MKVToolNix Header Editor or similar tools to tag audio and subtitle tracks.
Follow Plex naming and organization guidelines to properly name external subtitles.

I cannot verify all clients, but the language is displayed for both audio and subtitle tracks in Plex Web and Android clients.
As with filtering, the tracks must be correctly tagged.
