Obviously, this trick would only work on Plex web, not the windows app.
This also seems to be achievable with these smart filters:
I compared this to the solution posted by SwiftPanda and it appears to give identical results, so the option is yours.
That sorts a list of episodes by episode release date, not a list of TV shows by episode release date.
