why is in the german version the Library in the Plex Server settings called „Zuletzt hinzugefügte Filme“ but in the start screen „Recently added in Filme“?

The hub in the home screen is a relatively new one and simply hasn’t had a fitting translation available, before it was rolled into a server release.
This will change over the course of the next server releases.

You will have to wait until the server version which is currently in Beta becomes available publicly.
