unfortunately plex currently does not support the concept of tv ‘extras’.
IF the extras are listed as specials @ the tv db, then plex can utilize them, if the extras are named according to however the tvdb has the special episodes named.
you can also add extras that are not in the tvdb by using a higher special season/episode number, ie friends - s00e101- my extra here.mkv
theoretically, you could also use the tv extras agent, but that may not work in the future when plex switches to the new tv agent.
FWIW, here is my exact naming for this finale
