Upgrade a jail by stopping it, opening the Shell and entering iocage upgrade name -r release , where name is the plugin jail name and release is the desired release to upgrade to.
Where do I find he release info syntax so I can tell the shell what I want it to upgrade to?
I missed you were on TrueNAS Core from the title on your thread in my original reply. I saw you had linked to the 11.3-U2 user guide in your post was assumed you were on that.
Since TrueNAS is so new, you probably want to ask this question on the iXSystems forum, since It’s not really a Plex question.
Updating a jail doesn’t always work properly, I’ve had that happen myself. When 11.2U7 was released, we gained the ability to upgrade 11.2 jails to 11.3. I ended up with jails that could not be updated on patch level at all. They were permanently stuck on FreeBSD 11.3-p5. I also had some issues with pkg not being able to retrieve new repository data on others.
I know this may shock you, @Havohej, but in a worse-case scenario @Gimpymoo may not be able to update his existing jail successfully. In that case, since he is now on TrueNAS, he can simply make a new 12.x jail, install Plex to it, and then transfer his database files to the new jail, for all intents and purposes moving the server. That’s exactly what I ended up doing with that “un-updatable” 11.3 jail I had.
If he’s asking FreeNAS/TrueNAS related questions, obviously asking the question on iXsystems’s forums will get him in touch with a lot more people who can help him, and TrueNAS developers themselves may get information that will find it’s way into a TrueNAS update, which will make the process more likely to succeed for you, when you get your pants on.
I ended up rolling back to 11.3-U5 and all is well again.

With 12.0 STABLE RELEASE now available, it is possible more comments like this may crop up and eventually someone will figure it out.
I may be tempted just start a new server and import the settings/database files over depending on how straight forward that is.
Have been tempted to put the Plex server on a different a Windows appliance but not sure if possible to transfer database from FreeNAS Plex server to Windows Plex server.
There’s a post there regarding upgrading an 11.3 jail to 11.4. Since they both use the same kernel version that might be more likely to work and 11.4 is still supported by Ports and pkg-ng at this time.
