Can Someone advise if it is possible to get the standard plex players to read my plex server on locally on the LAN without the need to have to go out of the LAN to the internet and then back in again,

Yes, this should even be the default.
In some cases, if your router has something called ‘DNS rebinding protection’, it is necessary to create an exception rule from this for the domain plex.direct.

Sometimes it is necessary to use the Google DNS servers, instead of those supplied by your ISP. (usually a setting in your router as well)
And make sure that the Plex server is indeed in the same local network segment as your players. If you run it in a VM or “containerized”, this is not necessarily the case.
Using several “router”-type devices in a home network can be an issue, as well as can be the use of “Mesh”-routers. Because both can cause segmentation of the local LAN.
