Add episode Title to non-TV shows

First:
Put this ‘Show’ in a TV Show Library
Fix Match/Search Options/Personal Media (from the Agent Dropdown)
Select the only show that appears in the list - all done

that will stop Plex from trying to match it - and blowing your edits.

Then do this:

That will stop Plex from sticking a bogus embedded title field into the ‘episode name’ - and freak you out cause you don’t know where it’s coming from…

After that - maintain the Show/Season/Episode structure - 'cause TV Shows won’t work any other way (even when they’re Personal Media)…

A TV Show Library/
.....Chef Todd/
.........Season 01/
............Chef Todd - S01E01 - Todd boils a (already dead) mouse.mp4
............Chef Todd - S01E02 - Eating Something that won't stop moving.mp4
............and so on....

Hand Edit for Effect. <—the changes you make will stick now.

Note:
There is no elegant way to get an ‘Episode Name’ to show up ‘automagically’.
There is a painful, tedious, time consuming PITA way, but trust me - hand editing is much quicker.
Always include an Episode Name - so you’ll see what it is while you’re editing it. The ‘Title’ is the ‘Episode Name’ - blank, of course, until you fill it in. <—along with any and all of that other stuff to make it ‘look real’ and have proper function.

You could use ‘Year Seasons/Episodes’:
