I don’t know if it is possible but I would like to add my ebooks to Plex to play back like they do on the kindle with text to speech. If anyone knows if this is possible please respond.

This is not currently supported by Plex. There’s a very popular feature suggestion to support ebooks as a new media type. That thread had also picked up text-to-speech a few times.
Long story short:
- not currently possible
- you can comment/vote for the related feature suggestion
