you’re late… there’s already a number of threads discussing this… this being the main one with lots of feedback from users already running it (via Rosetta2)
From what I’ve seen in the past, Plex is likely to provide a native version at some point. However they’re not commenting on their roadmap.
The linked thread is strictly about Plex Server and primarily about transcoding performance. I don’t think Plex (the player) is ever discussed at all - it really an entirely different subject.
I have no plans to redeploy a new server, but I’d like M1 support in the player yesterday.
These other threads you mention must be very well hidden, because I can’t find any with the Mac player tag and even searching Google brings up so many unrelated results that if there are any threads discussing M1 player support, I’d need to dedicate an afternoon to finding them.
To me, that’s strange, not to see an early build, let alone rampant discussion about it. M1 discussion with respect to other software, and in general, is like a wildfire right now.
It’s mentioned a few times but the OPs question was also about the server.
If you desperately want a native player you can vote in the related feature suggestion.
You can use the iPad/iPhone version of the Player via the app store

I’d really like to see a universal / native build of the Plex client so I can sync my content to watch offline.
I tried the current client app and its really laggy and almost unusable.
I’ve been informed by Plex that they do not dicuss their development plans for the apps with the likes of me.
A paying customer.
This puts a whole new spin on the idea of customer support.
It’s unique, I’ll give them that.
That’s a bit unfair, as many companies, like apple for example, almost always protect their roadmap until they reach the point they are ready to announce or release such information.

To say it’s unfair is an understatement, Apple are extremely secretive of their new products. Hence the hype it creates, Apple marketing at work I would suggest. Look, everyone knew it was going to happen but they where not going to let the cat out of the bag of just how good the new M1 obvious has shown. Apple are very careful with NDA’s and for very good reasons.
Unfortunately the iOS app doesn’t seem to work with direct play so it’s useless for me, it can’t find the local server where other devices on my network can, perhaps something to do with how the iOS networking framework works perhaps?
I’m finding the web-based player unusable on my M1 MacBook Air… constant complaints about the page using too many resources, closing out of full-screen. skipping, etc – hoping the iOS player will give better results
Not having any issues running Plex Web on M1. Which browser are you using? Safari, Chrome? Other… would not expect playback issues unless something else is wrong, perhaps slow wifi if not connected to a wired network,
I was testing with Safari in full-screen mode, was only able to go about 10 minutes before seeing the ‘This page is using significant memory’ message and a few minutes later would automatically exit full-screen and stop playing.
I installed the iOS app and that’s been working pretty well, even though it’s a bit quirky running on MacOS
Seems odd, never had any issues with Safari and Plex Web on anything Ive run it on. Perhaps install another Browser and see if problems persist… Try Chrome, used that too on occasion and it seems to work ok.

To be fair, developers have only known for a very short time about the existence of ARM Macs, like only close to 8 months.
Pretty sure Plex for Mac is just an Electron container for the web UI. Took me about 8 minutes to upgrade my electron app to support M1/ARM, so I’m sure the Plex folks could do it immediately if they wanted.
@Mark_Otway you’re wrong about a couple assumptions there. regardless, please let us know when you have an integrated MPV video player in the Electron app w/o using the Pepper API.
