There’s already an existing suggestion thread discussing an option for Plex to list all content from your server / accessible libraries. You might want to comment/vote in that thread… although it seems unlikely this is going to happen based on how that Apple TV feature works (it’s a significant difference to publish a streaming provider’s central / regional catalogues vs. per app / user catalogues).
