Automatic language selection does not apply to other users in the household when preferred tracks are non-English or are not marked as enabled and default in the container.
Plex doesn’t consider the “default” flag at all.
Are you aware that each user has his/her own language preferences?
No. I have noticed that the managed user don’t keep the automatic audio/subtitle preferences set at languages. The audio selected is the first enabled track while for the server admin works
Please show the selections you made in one of your managed user’s accounts.

This is not the place to select the language preferences for your managed users.
“Switch user” to each of your users.
Then go into their user “Account Settings”.
scroll down to “AUDIO & SUBTITLE SETTINGS”
tick the checkbox and make the selections.
