I have 5 SG-1 Episodes in the Handbrake Queue right now. A few minutes ago I ripped them off that SG-1 disc with MakeMKV. I do a LOT of that. I create material that Direct Plays across my devices both locally and remote so the server can just Direct Play them. I curate a LOT (most) of material in that way. Eventually you will too.
Handy Handbrake Guide in my signature, but you’re on your own when it comes to 4k material, HEVC and the like, but if you’ve been poking around through the Guide previously you’ll know how to run some tests, try some things, do some research and possibly be able to help yourself create what you need at some point.
At this early stage for 4k and HEVC you should know that Plex doesn’t play well with either. There is a very small window opening through which you can throw some of this material and if you don’t know the exact shape of that window opening and create your material to fit through it, it’ll bounce off, fall back into the room and explode (Plex will try, pitifully, to transcode it, fail, and produce something that’s not even close to the original). Best to find out exactly what your devices require and provide it so Plex can deliver it as is.

PS:
I do have an automated process that deals with recordings I make via my Antennae and Internal Tuner Card. Windows Media Center handles the scheduling (I do set that up myself manually) and the recording are placed in my Recorded TV Folder. When they arrive MCEBuddy leaps into action converting those MPEG-2 Video streams in WTV containers to x264 video streams in MP4 containers with compatible audio streams, cuts out the commercials, renames and structures the files after matching with the online databases and runs those files into my TV Show or Movie Libraries depending what they are in a completely hands off operation.
It did takes years of experience to figure out exactly what I needed to make happen in order to make it happen and there are other automated processes that can be very helpful, but with 1 post in your backpack talking about those right now would be a waste of both of our time schedules.
